I invented this breakfast as a broke college student without much time to cook breakfast for myself before class. It’s still a favorite of mine for breakfast or as a snack.
Here’s what you’ll need :
1 Ripe Banana
2 Tbsp Peanut Butter
1 Tbsp Ground Golden Flax Seed
1 Tbsp Chia Seeds
1/4 tsp Cinnamon
Your favorite non-dairy milk to blend
*Optional Toppings * Unsweetened coconut, in season fruit (strawberries, raspberries, pomegranate), toasted walnuts, chopped medjool dates, dark chocolate chips
Unpeel the banana and mash in a bowl using a fork until smooth. Mix in the remaining ingredients, pouring in small amounts of non-dairy milk until you have reached your desired consistency. I usually use about 1/4 cup of soy milk to reach a creamy consistency that I can dip toast in.
