I think I can easily say that this Ranch Salad with Buffalo Tempeh is my favorite summer time meal. It’s cool and crunchy but also hot and spicy… my favorite combo! There is very little actually cooking involved with this meal but it is incredibly filling and delicious.
I often substitute chickpeas for the tempeh in this recipe. Cook the chickpeas the same way as the tempeh, but skip the tempeh boiling step. Use a masher to mash the chickpeas a bit to make the beans a more crumbly topping.
