Roasted Red Pepper Mac & Cheese

Post Punk Kitchen’s Roasted Red Pepper Mac & Cheese has been impressing my omnivorous friends for years.  This dish is super creamy with a pizza flavoring  that instantly wins over everyone who tries it.  If you’re avoiding gluten, try using rice pasta or use the sauce over quinoa topped with veggies for an easy meal.

Make the sauce ahead of time then cook the pasta day of, and reheat the sauce.  Feel free to add steamed broccoli, kale, or brussel sprouts to this recipe for even more deliciousness.
