Summer Rolls with Peanut Sauce

Last summer after getting countless and enormous collard green leaves from our farm share, I stumbled upon this summer roll recipe from Oh She Glows as a new way to way to use the leafy greens. Carefully de-stemming and lightly steaming the collards, made them into a pliable wrap for these summer rolls.

You can certainly stick to the recipe and use the spring roll wrappers, however using greenery for the wraps is equally as delicious and so very healthy! I’ve made these countless times a day ahead to take camping, on road trips, and cookouts and they are almost better the next day.
