Avocado Toast

Avocado toast with a Everyday Blueberry Smoothie has become one of my go to breakfasts.  I do not eat very much bread, but I am a huge fan of sourdough.  I discovered that a local bakery, Elm Street Bakery, makes traditional sourdough breads, allowing the dough to ferment, resulting in a bread with very little gluten.  I now only buy loafs from my local bakery, slicing, and then freezing the bread so I always have it on hand.

If you are gluten free or gluten intolerant, you may find that you can eat fermented sourdough bread without unwanted side effects.  DISCLAIMER I bought a loaf of sourdough from a grocery store and got it home only to discover that it was a refined white bread with additives to give it a “sourdough” flavor… So always check the label or talk with your local bakery and find out how the bread is made.

Here’s what you’ll need :

Avocado Toast : Serves 1

1 slice of toasted sourdough
1/2 avocado
Fresh Herbs – Try: Rosemary, Cilantro, or Parsley
Pinch of sea salt

*Optional toppings : Quick Pickled Onions & Cabbage , thinly sliced radish, sprouts, roasted red pepper, cucumber, sesame seeds

Using the back of a fork, mash the avocado in a small cup or mug.  Stir in the herbs and salt then spread on toasted sourdough.  Top with any desired toppings.
