Savory Oatmeal Bowl

Thinking about oatmeal as a savory dish has be revolutionary for me!  I came up with a generic base for this breakfast/lunch, and switch up the toppings and spices depending on what I have on hand.

Savory Oatmeal Bowl : Time 15 minutes, Makes one Serving

OAT & LENTIL BASE
1/4 cup old fashioned oats
1/4 cup red lentils
1    cup water
Your favorite spices
TRY : Cumin, cayenne, turmeric, chili powder, oregano
TRY:  Curry, smoked paprika, garlic, onion, powder
TRY : Rosemary, basil, garlic, oregano, sundried tomatoes
Salt and pepper, to taste

TOPPINGS
Anything goes here – like I said, I modify this dish depending on what I have in stock
TRY: avocado, hummus, salsa, cucumber, pickled onions
TRY: tahini, tomatoes, cashews, bell pepper, fresh cilantro
TRY: cashew cheese, spinach, sautéed mushrooms, broccoli

INSTRUCTIONS
In a small saucepan, combine the oats, lentils, liquid, and dry spices.  Set over medium heat, and cook until liquid is absorbed and oats and lentils are tender, which should take 5-10 minutes.

While the lentils and oats cook, prep all of your toppings.  Chop, steam, sauté… do what you gotta do.  Once the lentils & oats are done, place in a bowl and top with your desired toppings
