French Lentil Soup with Tarragon and Thyme

The herbs in this lentil soup recipe from the Veganomicon cookbook is what really sets it a part.  It’s definitely a favorite at our house and I freeze it often in mason jars for a quick grab and go lunch.  Feel free to throw in some of your favorite greens (spinach, kale, collards) for added heartiness!
